Vegetable Biryani Recipe

Ingredients
- 1 cup basmati rice
- 1/4 cup whole milk
- 1/8 tsp saffron threads
- 4 green cardamom pods
- 4 whole cloves
- 1 (3″) cinnamon stick
- 1 bay leaf
- 1 1/2 tsp kosher salt
- 1/2 tsp cumin seeds
- 1/4 cup ghee or neutral oil, divided
- 1 medium red onion, thinly sliced
- 1 1/2 tsp kosher salt, divided
- 3 green cardamom pods
- 3 whole cloves
- 1 bay leaf
- 1 1/2 tsp garam masala
- 1 tsp ground turmeric
- 1/2 tsp cumin seeds
- 1/2 tsp freshly ground black pepper
- 1/8 tsp cayenne pepper (optional)
- 1 medium Yukon gold potato, peeled and cut into 1/2″ pieces
- 1 cup small cauliflower florets
- 1 medium carrot, peeled and cut into 1/2″ pieces
- 5 cloves garlic, finely chopped
- 2 tsp finely chopped peeled ginger
- 1/2 cup whole-milk Greek yogurt
- 2 tbsp fresh lime juice
- 1 tbsp chopped fresh mint
- 1/4 cup chopped dried apricots
- 1/4 cup chopped roasted cashews
- 1 tbsp chopped fresh mint (for garnish)
Instructions
- Step 1: Rinse the basmati rice under cold water until the water runs clear. Transfer the rice to a medium bowl and cover with water. Soak for 30 minutes.
- Step 2: Meanwhile, warm the milk in a medium pot over medium heat until hot but not boiling. Remove from heat, stir in saffron threads, and let steep while you cook the rice.
- Step 3: Drain the soaked rice and place it in a medium pot. Add 4 green cardamom pods, 4 whole cloves, cinnamon stick, bay leaf, 1 1/2 tsp salt, cumin seeds, and 1 1/2 cups cold water. Bring to a boil, then cover and cook over low heat until the water is absorbed and rice is tender, about 10 to 12 minutes.
- Step 4: Remove the pot from heat. Discard the whole spices and fluff the rice with a fork. Set aside.
- Step 5: In a large heavy pot over medium heat, melt 2 tablespoons ghee. Add sliced onion and 1/2 teaspoon salt. Cook, stirring occasionally, until caramelized and browned, about 12 to 15 minutes. Transfer the caramelized onions to a bowl.
- Step 6: In the same pot, over medium-low heat, melt the remaining 2 tablespoons ghee. Add 3 green cardamom pods, 3 whole cloves, bay leaf, garam masala, turmeric, cumin seeds, black pepper, and cayenne if using. Stir constantly until fragrant, about 30 seconds.
- Step 7: Add potato and cauliflower florets, stirring frequently to prevent the spices from burning. Cook until vegetables are tender, about 8 to 10 minutes.
- Step 8: Add carrot, garlic, and ginger. Cook, stirring frequently, until tender and fragrant, about 5 minutes.
- Step 9: Stir in Greek yogurt, lime juice, and 1 tablespoon chopped fresh mint. Season with remaining 1 teaspoon salt. Cook, stirring occasionally, until some liquid evaporates, about 1 to 2 minutes. Remove and discard whole spices.
- Step 10: To assemble, spread half of the cooked rice in a large serving dish. Top with half of the vegetable mixture and half of the caramelized onions. Repeat layering with the remaining rice, vegetables, and onions.
- Step 11: Drizzle the saffron-infused milk over the top. Garnish with chopped roasted cashews, dried apricots, and remaining fresh mint. Serve warm.
