Ingredients

  • 3 large sweet potatoes (washed and sliced into rounds)
  • 3 tablespoons olive oil (for coating)
  • 1 tablespoon honey (regular or hot)
  • Additional honey (for serving)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon kosher salt (plus more for serving)
  • 1/2 teaspoon black pepper
  • 1/3 cup crumbled feta cheese (for topping)
  • Fresh chives or parsley (chopped, for garnish)

Instructions

  1. Step 1: Preheat the oven to 425°F.
  2. Step 2: Wash the sweet potatoes well and pat dry. Slice the potatoes into ⅓-inch thick round slices.
  3. Step 3: Drizzle the olive oil on a large rimmed sheet tray. Add the sweet potato rounds and toss to coat them evenly in the oil.
  4. Step 4: Sprinkle over the cinnamon, smoked paprika, ground cumin, ground coriander, red pepper flakes, kosher salt, and black pepper. Drizzle the tablespoon of honey over the potatoes, then toss again to evenly distribute the seasonings and honey.
  5. Step 5: Bake in the preheated oven for 20 minutes. Flip the sweet potato rounds carefully, then return to the oven for another 20–25 minutes, or until they are golden and crispy around the edges.
  6. Step 6: Transfer the roasted sweet potato rounds to a serving platter and season with a little more kosher salt to taste.
  7. Step 7: Drizzle additional honey over the potatoes, crumble the feta cheese on top, and garnish with chopped fresh chives or parsley.
  8. Step 8: Serve warm and enjoy!

Tips & Variations

  • For extra crispiness, place the sweet potato rounds in a single layer without overlapping.
  • If you prefer less heat, reduce or omit the red pepper flakes.
  • Substitute goat cheese for feta if you want a creamier topping.
  • Add a squeeze of fresh lemon juice on top before serving for a bright finish.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated 375°F oven for 10-15 minutes to retain crispiness. Avoid microwaving as it can make the rounds soggy.
