Instructions

  1. Step 1: Preheat your oven to 200°C / 400°F (180°C fan).
  2. Step 2: To smash the garlic, place the side of a knife on each unpeeled clove and hit firmly with the palm of your hand so it bursts open slightly but stays mostly intact.
  3. Step 3: Place the potatoes on a baking tray and push them together. Drizzle with olive oil, then sprinkle with salt and pepper. Toss the potatoes to coat evenly.
  4. Step 4: Add the thyme sprigs and smashed garlic cloves to the tray, tossing gently to distribute. Spread the potatoes out evenly on the tray.
  5. Step 5: Roast the potatoes for 30 minutes, then toss them to turn. Continue roasting for another 25 to 35 minutes until the potatoes are golden and crisp.
  6. Step 6: Remove from the oven, sprinkle with chopped parsley or fresh thyme if using, and serve immediately.
