Easy Roast Potatoes Recipe
Introduction
Easy roast potatoes are a classic side dish that’s crispy on the outside and fluffy on the inside. This simple recipe uses baby potatoes, garlic, and herbs for a flavorful result perfect for any meal.

Ingredients
- 1 kg / 2 lb baby potatoes (or other small potatoes, halved)
- 4 tbsp extra virgin olive oil
- 1 tsp cooking or kosher salt
- 1/4 tsp black pepper
- 5 garlic cloves with skin on, smashed
- 5 thyme sprigs (or 3 rosemary sprigs; see note on dried herbs)
- Finely chopped parsley or fresh thyme (optional)
Instructions
- Step 1: Preheat your oven to 200°C / 400°F (180°C fan).
- Step 2: To smash the garlic, place the side of a knife on each unpeeled clove and hit firmly with the palm of your hand so it bursts open slightly but stays mostly intact.
- Step 3: Place the potatoes on a baking tray and push them together. Drizzle with olive oil, then sprinkle with salt and pepper. Toss the potatoes to coat evenly.
- Step 4: Add the thyme sprigs and smashed garlic cloves to the tray, tossing gently to distribute. Spread the potatoes out evenly on the tray.
- Step 5: Roast the potatoes for 30 minutes, then toss them to turn. Continue roasting for another 25 to 35 minutes until the potatoes are golden and crisp.
- Step 6: Remove from the oven, sprinkle with chopped parsley or fresh thyme if using, and serve immediately.
Tips & Variations
- Use dried herbs like rosemary by adding about 1 teaspoon when tossing the potatoes if fresh herbs aren’t available.
- If potatoes stick to the tray, let them roast a little longer before turning; they’ll naturally release when well-roasted.
- Try adding a squeeze of lemon juice or a sprinkle of parmesan for extra flavor.
Storage
Store leftover roast potatoes in an airtight container in the refrigerator for up to 3 days. To reheat, warm them in a hot oven or skillet to help maintain crispiness.

FAQs
Can I use larger potatoes for this recipe?
Yes, but cut larger potatoes into smaller chunks to ensure even cooking and crispiness similar to baby potatoes.
What if I don’t have fresh herbs?
You can substitute fresh thyme or rosemary with dried herbs; use about one-third of the fresh amount as dried herbs are more concentrated.
